Hey Guys on this Tasty Tuesday I wanted to share a recipe, partially stolen from an amazing Paleo cookbook that I borrowed from WeArePrimalTwo. It is called Practical Paleo. The original recipe is the Bacon Wrapped Smoky Chicken Thighs. I made it Bacon Wrapped Chicken Breast Stuffed with Spinach and Organic Skim Cheese. My recipe is below:
- 4 skinless boneless chicken breast
- 8 slices of bacon, thick sliced
- 2 tsp McCormick’s Mesquite Chicken Seasoning
- 2 tsp of garlic
- 8 ounces of spinach
- 4 tablespoons of organic non fat skim cheese
- 1 egg white
- salt and pepper for taste
Preparation: Preheat oven to 375. Sprinkle the chicken thighs with 1 tsp of mesquite + garlic seasoning. Mix the spinach, egg white, and cheese with some salt and pepper to taste in a bowl. Slice the chicken breast almost all the way through to make it look like a bun. Place some of the spinach and cheese mix in between the two “buns” and then wrap each one in 2 strips of bacon. Bake for approximately 40 minutes. Enjoy!
Yield: 4 bacon-wrapped chicken thighs
Sidenote: I paired it with Zucchini Pasta! Yummy!
