Living the Paleo Life! Week 1 Update

Hey Loves,

This past week has been pretty good! I have been privileged enough to be in residency with an awesome paleoista. When I go to the hospital cafeteria with her, I’m constantly asking, “Is this Paleo?” To my surprise, a lot of what I have been eating has already been Paleo. The only real thing I’m giving up is my rice. Ahhh! My people eat rice. I was probably conceived and birthed in a bowl of rice. I am currently in search of carb substitutes. Zucchini pasta is delicious and I was turned on to that before I tried the Paleo life. So far, I am enjoying the freedom of my bowels. Seriously though, this lifestyle choice has been great for my finicky bowels. The train always rolls on time now. I also feel that my sensitive skin is benefiting from it as well. But who knows if it is due to the diet or the fact that I am more conscious of what is in the things that I put on and in my body. Alright, gotta get back to work!

Bacon Wrapped Chicken Stuffed with Spinach + Organic Skim Milk Cheese

Hey Guys on this Tasty Tuesday I wanted to share a recipe, partially stolen from an amazing Paleo cookbook that I borrowed from WeArePrimalTwo. It is called Practical Paleo. The original recipe is the Bacon Wrapped Smoky Chicken Thighs. I made it Bacon Wrapped Chicken Breast Stuffed with Spinach and Organic Skim Cheese. My recipe is below:

Ingredients:

  • 4 skinless  boneless chicken breast
  • 8 slices of bacon, thick sliced
  • 2 tsp McCormick’s Mesquite Chicken Seasoning
  • 2 tsp of garlic
  • 8 ounces of spinach
  • 4 tablespoons of organic non fat skim cheese
  • 1 egg white
  • salt and pepper for taste

Preparation: Preheat oven to 375. Sprinkle the chicken thighs with 1 tsp of mesquite + garlic seasoning. Mix the spinach, egg white, and cheese with some salt and pepper to taste in a bowl. Slice the chicken breast almost all the way through to make it look like a bun. Place some of the spinach and cheese mix in between the two “buns” and  then wrap each one in 2 strips of bacon. Bake for approximately 40 minutes. Enjoy!

Yield: 4 bacon-wrapped chicken thighs

Sidenote: I paired it with Zucchini Pasta! Yummy!

Paleo Update

Hey Guys,

Keeping it short and sweet this morning. As promised I wanted to share a bit about my first day of paleoing. It was so HARD. EEK! During lunch, I went to the hospital cafeteria and tried to find food that stuck to the paleo diet. Every where I looked there was nothing. I think this may be due to my inexperience but I walked around in circles trying to find something appetizing and was finally able to find chicken breast and broccoli which turned out to be surprisingly delicious, even though the chicken breast was a wee bit dry. I am officially in search of some awesome paleo recipes. I have definitely seen some online on my instagram and facebook browsing. I love to cook so I will get creative as well. But I definitely need help and advice.
